Instructions
- Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.
- In a large bowl, whisk together flour, baking powder, salt, cinnamon, nutmeg, and ginger.
- Add cold cubed butter and cut into flour mixture until it resembles coarse crumbs.
- In a separate bowl, whisk pumpkin puree, egg, cream, and vanilla extract.
- Pour wet ingredients into dry ingredients and stir until just combined; do not overmix.
- Turn dough onto floured surface and pat into a 1-inch thick circle.
- Cut dough into 8 wedges and place on prepared baking sheet.
- Bake for 18-22 minutes or until golden brown.
- Allow to cool slightly on a wire rack before serving.
Notes
Use cold butter for flaky texture. Avoid overmixing the dough to prevent toughness. Optionally, drizzle with glaze made from powdered sugar and milk after baking.
