Description
A dense, chewy, and spiced fall treat loaded with chocolate chips and real pumpkin flavor.
Ingredients
1/2 cup unsalted butter, melted and cooled
1 cup light brown sugar, packed
1/4 cup pumpkin puree (blotted with paper towels)
1 large egg yolk
1 teaspoon vanilla extract
1 cup all-purpose flour
1.5 teaspoons pumpkin pie spice
1/4 teaspoon salt
3/4 cup semi-sweet chocolate chips
Instructions
Step 1: Preheat your oven to 350°F (175°C) and line an 8x8 inch baking pan with parchment paper.
Step 2: In a large mixing bowl, whisk the melted butter and brown sugar together until well combined.
Step 3: Add the blotted pumpkin puree, egg yolk, and vanilla extract, whisking until smooth.
Step 4: Gently fold in the flour, pumpkin pie spice, and salt until just combined; do not overmix.
Step 5: Fold in 1/2 cup of the chocolate chips, then spread the batter into the prepared pan.
Step 6: Sprinkle the remaining 1/4 cup of chocolate chips on top.
Step 7: Bake for 25-30 minutes, or until the edges are set and a toothpick comes out with moist crumbs.
Step 8: Allow to cool completely in the pan before lifting out and slicing into squares.
Notes
Ensure you blot the pumpkin puree to remove excess moisture for the chewiest texture.
