Ingredients
1/2 cup (1 stick) unsalted butter
1/2 cup milk (dairy or non-dairy)
2 cups granulated sugar
1/2 cup pumpkin puree (not pumpkin pie filling)
1 teaspoon vanilla extract
2 tablespoons pumpkin pie spice
1/4 teaspoon salt
3 cups quick-cooking oats
Instructions
Step 1: Line a baking sheet with parchment paper and set aside.
Step 2: In a medium saucepan, combine butter, milk, sugar, and pumpkin puree. Bring the mixture to a rolling boil over medium heat, stirring constantly.
Step 3: Once a rolling boil is reached, continue to boil for exactly 1 minute, stirring continuously. Remove from heat immediately.
Step 4: Stir in the vanilla extract, pumpkin pie spice, and salt until well combined.
Step 5: Add the quick-cooking oats and stir quickly until all oats are thoroughly coated.
Step 6: Working swiftly, drop spoonfuls of the mixture onto the prepared parchment paper.
Step 7: Allow cookies to cool completely at room temperature for at least 30-60 minutes, or until firm. Once set, enjoy!
Notes
