Ingredients
1/2 cup unsalted butter, melted and cooled
1 cup light brown sugar, packed
1/4 cup pure pumpkin puree (blotted to remove excess moisture)
1 large egg, room temperature
1 tsp vanilla extract
1 1/4 cups all-purpose flour
1 tsp pumpkin pie spice
1/2 tsp baking powder
1/4 tsp salt
1 cup high-quality white chocolate chips
Instructions
Step 1: Preheat your oven to 350°F (175°C) and grease an 8x8 inch baking pan or line it with parchment paper for easy removal.
Step 2: In a large mixing bowl, whisk together the melted butter and brown sugar until smooth and well combined.
Step 3: Add the blotted pumpkin puree, egg, and vanilla extract, whisking until the mixture is glossy and uniform.
Step 4: Gently fold in the flour, pumpkin pie spice, baking powder, and salt using a spatula until just combined; do not overmix.
Step 5: Fold in 3/4 cup of the white chocolate chips, then spread the batter evenly into the prepared pan.
Step 6: Sprinkle the remaining 1/4 cup of white chocolate chips over the top and bake for 25-30 minutes, or until a toothpick comes out with just a few moist crumbs.
Step 7: Allow the pumpkin spice white chocolate blondies to cool completely in the pan before slicing into 16 squares.
