Ingredients
9 cups rice cereal squares (like Chex)
1 cup semi-sweet chocolate chips
1/2 cup creamy peanut butter
1/4 cup unsalted butter
1 teaspoon vanilla extract
1 1/2 cups powdered sugar
Instructions
Step 1: Measure 9 cups of rice cereal into a large mixing bowl and set aside.
Step 2: In a medium microwave-safe bowl, combine the chocolate chips, peanut butter, and butter. Heat on high for 1 minute, then stir. Continue heating in 30-second intervals until smooth.
Step 3: Stir the vanilla extract into the melted chocolate mixture until well incorporated.
Step 4: Pour the chocolate mixture over the cereal in the bowl. Stir gently with a spatula until all cereal pieces are evenly coated.
Step 5: Place the powdered sugar in a large 2-gallon plastic resealable bag. Add the chocolate-coated cereal to the bag.
Step 6: Seal the bag and shake well until every piece of cereal is covered in powdered sugar. Spread onto waxed paper to cool.
