This incredibly easy recipe combines tender chicken with a savory, tangy sauce made from dry onion soup mix, ketchup, and brown sugar, baked to perfection for a hassle-free meal.
Ingredients
2-3 lbs boneless, skinless chicken breasts or thighs
¼ cup brown sugar, packed
½ cup ketchup
¼ cup water
1 packet (approx. 2 oz) dry onion soup mix
Instructions
Step 1: Preheat your oven to 375°F (190°C). Lightly grease a large casserole dish.
Step 2: Pat the chicken pieces dry with paper towels. Arrange them in a single layer in the prepared casserole dish. If using large chicken breasts, you can slice them horizontally to make thinner cutlets for faster, more even cooking.
Step 3: In a medium bowl, combine the brown sugar, ketchup, water, and dry onion soup mix. Whisk thoroughly until all ingredients are well blended and the brown sugar has mostly dissolved.
Step 4: Pour the sauce evenly over the chicken in the casserole dish, ensuring each piece is well coated.
Step 5: Bake for 35-40 minutes, or until the chicken is cooked through and reaches an internal temperature of 165°F (74°C). The sauce should be bubbly and slightly caramelized.
Step 6: Remove from the oven and let the chicken rest for 5 minutes before serving. This helps to keep the chicken juicy. Garnish with fresh parsley or chives, if desired.
Notes
For an added depth of flavor, you can add a dash of liquid smoke to the sauce. To make it a more complete one-pan meal, toss in some chopped potatoes, carrots, or bell peppers with the chicken before baking.
