Description
A vibrant, healthy, and incredibly fast soup featuring tender chicken, creamy cannellini beans, and a refreshing lemon-dill broth.
Ingredients
1 tbsp olive oil
1 small yellow onion, diced
2 medium carrots, sliced
2 stalks celery, sliced
3 cloves garlic, minced
6 cups low-sodium chicken broth
2 cups cooked chicken, shredded or diced
2 (15 oz) cans cannellini beans, rinsed and drained
1/4 cup fresh dill, finely chopped
Juice and zest of 1 large lemon
2 cups fresh baby spinach
Salt and black pepper to taste
Instructions
Step 1: Heat olive oil in a large pot over medium heat. Add onion, carrots, and celery, cooking for 5-7 minutes until soft.
Step 2: Add garlic and cook for 30 seconds until fragrant.
Step 3: Pour in chicken broth and bring to a simmer. Season with salt and pepper.
Step 4: Add the shredded chicken and cannellini beans. Simmer for 10 minutes to allow flavors to meld.
Step 5: Stir in the lemon juice and lemon zest.
Step 6: Add fresh dill and baby spinach. Stir until the spinach is wilted (about 1 minute).
Step 7: Ladle into bowls and serve immediately.
Notes
Using a rotisserie chicken makes this recipe exceptionally fast. If you prefer a thicker soup, mash some of the beans before adding them to the pot.
