Description
A rich, zesty, and incredibly easy-to-make chicken soup infused with the classic flavor of ranch seasoning and creamy cheese.
Ingredients
2 lbs cooked chicken, shredded
32 oz chicken broth
1 packet (1 oz) dry ranch dressing mix
8 oz cream cheese, softened
1 can (15 oz) black beans, rinsed and drained
1 can (15 oz) whole kernel corn, drained
1 can (10 oz) diced tomatoes with green chilies
1 small onion, diced
2 cloves garlic, minced
1 tbsp olive oil
Instructions
Step 1: In a large pot, heat olive oil over medium heat and sauté the onion and garlic until soft and fragrant.
Step 2: Add the shredded chicken, chicken broth, black beans, corn, and diced tomatoes with green chilies to the pot.
Step 3: Stir in the ranch dressing mix until well combined and bring the mixture to a simmer.
Step 4: Reduce heat to low. Add the softened cream cheese in small chunks, stirring constantly until fully melted and incorporated.
Step 5: Simmer for an additional 5 minutes to let flavors meld, then serve warm with your favorite toppings.
Notes
Using a rotisserie chicken can save you 15 minutes of prep time. For a thicker soup, let it simmer uncovered for an extra 10 minutes.
