Ingredients
4 boneless, skinless chicken breasts
1/2 tsp Salt
1/2 tsp black pepper
1 tsp garlic powder
1 tbsp olive oil
1/2 cup raspberry preserves
1 fresh jalapeño, finely diced
1 tsp apple cider vinegar
4 oz cream cheese, softened
1 cup shredded mozzarella cheese
1 tbsp fresh parsley, chopped
Instructions
Step 1: Preheat your oven to 375°F (190°C).
Step 2: Season the chicken breasts with salt, black pepper, and garlic powder on both sides.
Step 3: Heat olive oil in an oven-safe skillet over medium-high heat. Sear chicken for 3-4 minutes per side until golden.
Step 4: In a small bowl, mix the raspberry preserves, diced jalapeño, and apple cider vinegar.
Step 5: Spread 1 ounce of softened cream cheese over the top of each chicken breast.
Step 6: Spoon the raspberry jalapeño mixture over the cream cheese.
Step 7: Sprinkle mozzarella cheese over each breast.
Step 8: Bake in the oven for 15-20 minutes until the internal temperature of the chicken reaches 165°F.
Step 9: Garnish with fresh parsley and let rest for 5 minutes before serving.
Notes
Remove jalapeño seeds to reduce the heat level. Ensure the skillet is truly oven-safe before starting.
