Ingredients
2 1/2 cups all-purpose flour
1 1/2 cups granulated sugar
1 teaspoon baking soda
1 teaspoon salt
1 teaspoon cocoa powder
1 1/2 cups vegetable oil
1 cup buttermilk, room temperature
2 large eggs, room temperature
2 tablespoons red food coloring
1 teaspoon white distilled vinegar
1 teaspoon vanilla extract
16 oz cream cheese, softened
1/2 cup unsalted butter, softened
4 cups powdered sugar
1 teaspoon vanilla extract (for frosting)
Instructions
Step 1: Preheat your oven to 350°F (175°C) and grease two 9-inch cake pans.
Step 2: In a large bowl, sift together the flour, sugar, baking soda, salt, and cocoa powder.
Step 3: In a medium bowl, whisk the oil, buttermilk, eggs, food coloring, vinegar, and vanilla until well combined.
Step 4: Gradually add the wet ingredients to the dry ingredients, mixing until just smooth.
Step 5: Divide the batter into the pans and bake for 30-35 minutes until a toothpick comes out clean.
Step 6: Cool completely before frosting with a blend of cream cheese, butter, powdered sugar, and vanilla.
