Ingredients
2 ripe but firm mangoes, peeled and diced
1 large English cucumber, diced
1/4 cup red onion, thinly sliced
1/4 cup fresh cilantro, chopped
2 tablespoons fresh lime juice
1 tablespoon honey or maple syrup (for vegan)
1/2 teaspoon grated fresh ginger (optional)
Pinch of red pepper flakes (optional)
Salt and freshly ground black pepper to taste
Instructions
Step 1: Prepare the produce. Peel and dice the ripe mangoes into bite-sized pieces. Dice the English cucumber. Thinly slice the red onion.
Step 2: Combine ingredients. In a large mixing bowl, gently combine the diced mango, cucumber, thinly sliced red onion, and chopped fresh cilantro.
Step 3: Make the dressing. In a small separate bowl, whisk together the fresh lime juice, honey (or maple syrup), optional grated ginger, optional red pepper flakes, salt, and freshly ground black pepper.
