  • 2 cups graham cracker crumbs
  • 1/2 cup unsalted butter, melted

  • 4 cups chopped rhubarb
  • 1 cup granulated sugar
  • 1/4 cup water
  • 1 tbsp lemon juice
  • 1 tsp vanilla extract
  • 1 cup whipped cream
  • 1/4 cup chopped nuts (almonds or walnuts)
  • Fresh rhubarb stalks (optional)
  • Mint leaves (optional)

Instructions

  1. In a bowl, combine graham cracker crumbs, melted butter, and granulated sugar. Mix until well combined.
  2. Press mixture into bottom of a greased baking dish and chill in refrigerator for 30 minutes.
  3. In a saucepan, combine chopped rhubarb, granulated sugar, water, lemon juice, and vanilla extract. Cook over medium heat until rhubarb is soft and mixture thickens.
  4. Let filling cool to room temperature, then spread over chilled crust.
  5. Chill dessert in refrigerator for at least 2 hours or until set.
  6. Garnish with whipped cream, chopped nuts, fresh rhubarb stalks, and mint leaves if desired. Serve immediately and enjoy!
