- 2 cups graham cracker crumbs
- 1/2 cup unsalted butter, melted
- 1/4 cup granulated sugar
- 4 cups chopped rhubarb
- 1 cup granulated sugar
- 1/4 cup water
- 1 tbsp lemon juice
- 1 tsp vanilla extract
- 1 cup whipped cream
- 1/4 cup chopped nuts (almonds or walnuts)
- Fresh rhubarb stalks (optional)
- Mint leaves (optional)
Instructions
- In a bowl, combine graham cracker crumbs, melted butter, and granulated sugar. Mix until well combined.
- Press mixture into bottom of a greased baking dish and chill in refrigerator for 30 minutes.
- In a saucepan, combine chopped rhubarb, granulated sugar, water, lemon juice, and vanilla extract. Cook over medium heat until rhubarb is soft and mixture thickens.
- Let filling cool to room temperature, then spread over chilled crust.
- Chill dessert in refrigerator for at least 2 hours or until set.
- Garnish with whipped cream, chopped nuts, fresh rhubarb stalks, and mint leaves if desired. Serve immediately and enjoy!
