Ingredients
2 1/2 cups whole milk
1/4 cup granulated sugar
2 Tablespoons unsweetened cocoa powder
6 oz bittersweet or semi-sweet chocolate, chopped
1 teaspoon pure vanilla extract
Instructions
Step 1: In a medium saucepan, combine the whole milk, granulated sugar, and unsweetened cocoa powder. Whisk well to combine and dissolve the cocoa powder.
Step 2: Heat the mixture over medium heat, stirring frequently, until it is hot and steaming, but not boiling. Do not allow it to boil.
Step 3: Remove the saucepan from the heat. Add the chopped bittersweet or semi-sweet chocolate and vanilla extract. Let sit for 1-2 minutes to allow the chocolate to melt.
Step 4: Whisk vigorously until the chocolate is completely melted and the hot chocolate is smooth and creamy. If any chocolate pieces remain, return to very low heat and continue whisking until smooth.
Step 5: Taste and adjust sweetness if desired. Pour into mugs, garnish as desired with whipped cream or marshmallows, and serve immediately.
Notes
For extra richness, add a tablespoon of heavy cream with the milk. For serving, homemade whipped cream, marshmallows, or a sprinkle of cinnamon are delicious additions. You can also experiment with a pinch of cayenne pepper for a Mexican hot chocolate twist.
