1/4 cup honey

Crushed pistachios (optional, for garnish)


Instructions

Step 1: Prepare the Gelato Base: In a large bowl, whisk together the whole milk ricotta cheese, heavy cream, granulated sugar, and vanilla extract until the mixture is completely smooth and well combined.
Step 2: Churn the Gelato: Pour the prepared mixture into your ice cream maker. Churn according to the manufacturer’s instructions, typically for 25-30 minutes, until the gelato is thick and has a soft-serve consistency.
Step 3: Prepare the Topping: While the gelato is churning, in a separate small bowl, combine the chopped pistachios, chopped dried figs, and honey. Mix these ingredients thoroughly until the figs and pistachios are well coated.
Step 4: Fold in Topping: Once the gelato has finished churning, gently fold in the pistachio and fig topping into the churned gelato. Distribute the mixture evenly.
Step 5: Freeze and Serve: Transfer the gelato to an airtight container and freeze for at least 2-4 hours, or until firm enough to scoop. Garnish with fresh mint leaves and additional crushed pistachios, if desired, before serving immediately.

Notes

For an even richer flavor, you can slightly toast the pistachios before chopping. If the gelato becomes too hard after freezing, let it sit at room temperature for 5-10 minutes before scooping.
