Description

A ridiculously flavorful and easy recipe for crispy chicken tenders coated in a savory Ritz cracker and 'crack chicken' seasoning crust.

Ingredients

Scale

1 lb chicken tenders
½ cup mayonnaise
½ cup grated Parmesan cheese
1 oz packet Ranch seasoning mix
½ teaspoon garlic powder
½ teaspoon onion powder
1 cup Ritz crackers, crushed
2 large eggs, beaten
¼ cup all-purpose flour (optional, for extra crispiness)

Instructions

Step 1: Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper or foil and place a wire rack on top. Lightly spray the rack with cooking spray.
Step 2: In a medium bowl, combine the mayonnaise, grated Parmesan cheese, Ranch seasoning mix, garlic powder, and onion powder. Mix well until everything is thoroughly combined.
Step 3: In a separate shallow dish, place the crushed Ritz crackers. In another shallow dish, beat the two large eggs. If using, place the all-purpose flour in a third shallow dish.
Step 4: Pat the chicken tenders dry with paper towels. If using flour, dredge each tender in flour, shaking off excess.
Step 5: Dip each chicken tender into the mayonnaise mixture, ensuring it's fully coated. Let any excess drip off.
Step 6: Next, dip the mayo-coated tender into the beaten eggs, allowing excess to drip.
Step 7: Immediately transfer the chicken tender to the crushed Ritz crackers. Press firmly to ensure the crackers adhere well to all sides of the chicken, forming a thick, even crust.
Step 8: Place the coated chicken tenders on the prepared wire rack on your baking sheet, ensuring there is space between each tender for air circulation.
Step 9: Bake for 18-22 minutes, or until the chicken is cooked through (internal temperature reaches 165°F/74°C) and the crust is golden brown and crispy. Cooking time may vary based on thickness of tenders.
Step 10: Serve hot with your favorite dipping sauces and enjoy these irresistibly crispy Ritz Cracker Crusted Crack Chicken Tenders!

Notes

For an even crispier result, consider air frying at 375°F (190°C) for 10-14 minutes, flipping halfway through. Ensure chicken is cooked through. You can also add a pinch of smoked paprika to the cracker mix for an extra layer of flavor.
