Ingredients
1 lb fresh carrots, scrubbed and halved lengthwise
2 tbsp olive oil
1/2 tsp sea salt
1/4 tsp black pepper
1/4 cup creamy tahini
1 tbsp pure maple syrup
1 tbsp lemon juice
1 clove garlic, minced
2-3 tbsp warm water
Fresh parsley and sesame seeds for garnish
Instructions
Step 1: Preheat your oven to 400°F (200°C) and line a large baking sheet with parchment paper for easy cleanup.
Step 2: Toss the prepared carrots with olive oil, sea salt, and black pepper directly on the baking sheet until evenly coated.
Step 3: Spread the carrots out in a single layer, ensuring they aren't crowded, and roast for 25-30 minutes until tender and caramelized at the edges.
Step 4: While the carrots roast, whisk together the tahini, maple syrup, lemon juice, and minced garlic in a small bowl.
Step 5: Gradually add warm water to the tahini mixture one tablespoon at a time, whisking constantly until the sauce reaches a smooth, pourable consistency.
Step 6: Arrange the hot roasted carrots on a serving platter and generously drizzle the maple tahini sauce over the top.
Step 7: Garnish with chopped fresh parsley and a sprinkle of sesame seeds before serving immediately.
Notes
