Description
Thick-cut cauliflower steaks roasted until caramelized and served with a vibrant, zesty garlic herb sauce.
Ingredients
1 large head of cauliflower
3 tablespoons olive oil (for roasting)
1 teaspoon salt
1/2 teaspoon black pepper
1/2 teaspoon garlic powder
1/2 cup fresh parsley, finely chopped
1/4 cup fresh cilantro, finely chopped
2 cloves garlic, minced
1/4 cup extra virgin olive oil (for sauce)
1 tablespoon lemon juice
1/2 teaspoon red pepper flakes (optional)
Instructions
Step 1: Preheat your oven to 400°F (200°C) and line a large baking sheet with parchment paper or lightly grease it.
Step 2: Trim the leaves from the cauliflower head, keeping the stem intact. Slice the cauliflower through the center into 1-inch thick 'steaks'.
Step 3: Place the steaks and any loose florets onto the prepared baking sheet. Brush both sides with 3 tablespoons of olive oil and season with salt, pepper, and garlic powder.
Step 4: Roast for 15-20 minutes, then carefully flip the steaks and roast for another 10-15 minutes until tender and the edges are golden brown.
Step 5: While the cauliflower is roasting, prepare the garlic herb sauc by mixing the parsley, cilantro, minced garlic, extra virgin olive oil, lemon juice, and red pepper flakes in a small bowl.
Step 6: Remove the cauliflower from the oven and transfer to a serving platter. Drizzle the garlic herb sauc generously over the hot steaks and serve immediately.
Notes
Ensure the cauliflower head is large and firm to get the best steak cuts. Save the extra florets for salads!
