Ingredients
20 oz refrigerated cheese tortellini
8 oz hard salami, cubed
8 oz fresh mozzarella pearls
1 cup cherry tomatoes, halved
1/2 cup red onion, finely diced
1/2 cup sliced black olives
1/2 cup zesty Italian dressing
1 tablespoon red wine vinegar
1 teaspoon dried oregano
1/4 cup fresh parsley, chopped
Instructions
Step 1: Cook the tortellini in a large pot of salted boiling water until al dente, then drain and cool immediately.
Step 2: In a large mixing bowl, combine the salami, mozzarella, tomatoes, red onion, and olives.
Step 3: Whisk together the Italian dressing, vinegar, and oregano in a small bowl.
Step 4: Add the cooled pasta to the bowl with the other ingredients.
Step 5: Pour the dressing over the salad and toss gently to combine.
Step 6: Garnish with fresh parsley and refrigerate for at least 2 hours before serving.
Notes
