Ingredients
1 cup (2 sticks) unsalted butter, softened
3/4 cup granulated sugar
3/4 cup packed light brown sugar
2 large eggs
1 teaspoon vanilla extract
1 1/2 cups all-purpose flour
1 teaspoon baking soda
1/2 teaspoon salt
3 cups old-fashioned rolled oats
1 cup caramel bits (or chopped soft caramels)
1/2 teaspoon flaky sea salt, for sprinkling
Instructions
Step 1: Preheat oven to 3500F (1750C). Line baking sheets with parchment paper.
Step 2: In a large bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy.
Step 3: Beat in the eggs one at a time, then stir in the vanilla extract until well combined.
Step 4: In a separate medium bowl, whisk together the all-purpose flour, baking soda, and salt.
Step 5: Gradually add the dry ingredients to the wet ingredients, mixing on low speed until just combined. Do not overmix.
Step 6: Fold in the old-fashioned rolled oats and caramel bits until evenly distributed throughout the dough.
Step 7: Drop rounded tablespoons of dough onto the prepared baking sheets, about 2 inches apart.
Step 8: Bake for 10-12 minutes, or until the edges are golden brown but the centers still look slightly soft.
Step 9: Remove from the oven and immediately sprinkle each cookie with flaky sea salt. Let cool on the baking sheets for 5 minutes before transferring to a wire rack to cool completely.
Notes
For extra chewiness, chill the dough for 30 minutes before baking. Ensure your butter is truly softened for the best creaming results.
