Ingredients
2 cups sugar cookie crumbs (about 16 cookies, crushed)
1/2 cup unsalted butter, melted
16 oz cream cheese, softened
1 cup powdered sugar
1 teaspoon vanilla extract
Festive sprinkles, for decoration (optional)
Instructions
Step 1: Line an 8x8 or 9x9 inch baking pan with parchment paper, leaving an overhang on the sides for easy removal later. Set aside.
Step 2: In a medium bowl, combine the sugar cookie crumbs and melted unsalted butter. Mix until the crumbs are evenly moistened.
Step 3: Press the crumb mixture firmly and evenly into the bottom of the prepared pan to form the crust.
Step 4: In a large mixing bowl, beat the softened cream cheese until smooth and creamy. Gradually add the powdered sugar, beating until fully incorporated and light and fluffy.
Step 5: Stir in the vanilla extract until just combined.
Step 6: Carefully spread the cream cheese mixture evenly over the cookie crust. Smooth the top with a spatula.
Step 7: Cover the pan loosely with plastic wrap and refrigerate for at least 2 hours, or until the bars are completely firm.
Step 8: Once chilled, use the parchment paper overhang to lift the bars out of the pan. Cut into 12-16 squares or rectangles.
Step 9: Decorate with festive sprinkles just before serving, if desired. Enjoy!
