Ingredients
1 pound (450 g) breakfast sausage (mild or spicy)
3 tablespoons unsalted butter
3 tablespoons all-purpose flour
2 cups milk (whole or 2%)
1/2 teaspoon black pepper
1/4 teaspoon salt (or to taste)
1 pre-made pizza crust (12-14 inch, thin or regular)
2 cups shredded mozzarella cheese
4-6 large eggs
2 tablespoons chopped fresh parsley (for garnish, optional)
Instructions
Step 1: Preheat your oven to 400°F (200°C). Prepare a baking sheet with parchment paper or light grease.
Step 2: In a large skillet over medium-high heat, brown the breakfast sausage, breaking it into crumbles as it cooks. Once fully cooked and no longer pink, drain off any excess grease and set the sausage aside.
Step 3: In the same skillet (or a clean one), melt the unsalted butter over medium heat. Whisk in the all-purpose flour and cook for 1-2 minutes, stirring constantly, to create a roux.
Step 4: Gradually whisk in the milk, a little at a time, ensuring there are no lumps. Continue whisking as the gravy comes to a simmer and begins to thicken, about 5-7 minutes. Season with black pepper and salt to taste. Remove from heat.
Step 5: Place the pre-made pizza crust on your prepared baking sheet. Evenly spread the warm sausage gravy over the pizza crust, leaving a small border for the crust.
Step 6: Sprinkle the cooked sausage crumbles evenly over the gravy. Top with the shredded mozzarella cheese.
Step 7: Carefully crack the 4-6 large eggs directly onto the pizza, spacing them out evenly.
Step 8: Bake for 15-20 minutes, or until the crust is golden brown, the cheese is bubbly and melted, and the eggs are set to your desired doneness (firmer whites, potentially still slightly runny yolks).
Step 9: Remove the pizza from the oven. If desired, garnish with fresh chopped parsley. Slice, serve immediately, and enjoy your hearty breakfast pizza!
Notes
For a spicier kick, use hot breakfast sausage or add a pinch of red pepper flakes to the gravy. You can also customize with other toppings like cooked bacon bits, sautéed onions, or bell peppers. The gravy and sausage can be prepared a day in advance and stored in the refrigerator.
