A sweet and savory breakfast bake that perfectly replicates the flavors of the famous pancake breakfast sandwich in an easy-to-share casserole form.
Ingredients
1 pound ground breakfast sausage
6 slices precooked bacon, cut into bite size pieces
3 cups complete pancake mix (just add water variety)
2 cups water
1 1/2 cups shredded cheddar cheese
1/4 cup real maple syrup or pancake syrup
2 Tablespoons softened butter
Instructions
Step 1: Preheat your oven to 375°F (190°C). Use the 2 tablespoons of softened butter to thoroughly grease a 9x13-inch baking dish.
Step 2: In a skillet over medium-high heat, cook the ground breakfast sausage until fully browned and crumbled. Drain the grease well and set aside.
Step 3: In a large mixing bowl, combine the pancake mix and water. Stir until just combined; it is okay if a few small lumps remain.
Step 4: Stir in the cooked sausage, diced bacon pieces, 1 cup of the shredded cheddar cheese, and the maple syrup into the pancake batter.
Step 5: Spread the mixture evenly into the prepared baking dish. Sprinkle the remaining 1/2 cup of shredded cheese over the top.
Step 6: Bake in the center rack of the oven for 25 to 30 minutes, or until the top is golden brown and the center is set.
Step 7: Allow the casserole to rest for 5 minutes before slicing. Serve with additional maple syrup if desired.
Notes
Ensure the sausage is very well-drained to keep the pancake texture fluffy. Use real maple syrup for the most authentic flavor.
