Ingredients
2 cups self-raising flour
1/2 teaspoon baking powder
1/2 teaspoon salt
1 teaspoon sugar
1 cup grated tasty cheddar cheese
1 cup cooked bacon, chopped (about 6–8 slices)
1 cup milk
2 large eggs
1/3 cup vegetable oil or melted butter
1/2 teaspoon black pepper
2 tablespoons finely chopped chives
Extra cheese for sprinkling on top
Instructions
Step 1: Preheat your oven to 400°F (200°C) and grease a 12-cup muffin tin.
Step 2: In a large bowl, combine the self-raising flour, baking powder, salt, sugar, and black pepper.
Step 3: Fold in the grated cheddar cheese and the pre-cooked bacon pieces into the dry ingredients.
Step 4: In another container, whisk the milk, eggs, and oil together until smooth.
Step 5: Pour the wet ingredients into the dry ingredients and fold together gently; do not overmix.
Step 6: Spoon the batter into the prepared muffin tin, filling each cup about 3/4 of the way.
Step 7: Bake for 18–22 minutes until golden and a skewer comes out clean.
Notes
Ensure the bacon is fully cooled before adding to the batter to avoid premature cooking of the eggs.
