- 1 lb corned beef, chopped
- 1 cup sauerkraut, drained and chopped
- 1 cup shredded Swiss cheese
- ½ cup Thousand Island dressing

- Vegetable oil for frying
- Thousand Island dressing for serving (optional)

Instructions
- In a large bowl, combine corned beef, sauerkraut, Swiss cheese, Thousand Island dressing, and caraway seeds; mix well.
- Lay an egg roll wrapper on a clean surface with one corner pointing towards you.
- Place about ¼ cup filling in center of wrapper.
- Fold bottom corner over filling, fold sides inward, then roll tightly to top corner; seal edge with beaten egg.
- Repeat with remaining wrappers and filling.
- Heat 2 inches of vegetable oil in large skillet over medium heat.
- Fry egg rolls 2-3 minutes per side until golden brown and crispy.
- Drain on paper towel-lined plate.
- Optionally serve with Thousand Island dressing and garnish with fresh parsley.
