  • Vegetable oil for frying
  • Thousand Island dressing for serving (optional)

Instructions

  1. In a large bowl, combine corned beef, sauerkraut, Swiss cheese, Thousand Island dressing, and caraway seeds; mix well.
  2. Lay an egg roll wrapper on a clean surface with one corner pointing towards you.
  3. Place about ¼ cup filling in center of wrapper.
  4. Fold bottom corner over filling, fold sides inward, then roll tightly to top corner; seal edge with beaten egg.
  5. Repeat with remaining wrappers and filling.
  6. Heat 2 inches of vegetable oil in large skillet over medium heat.
  7. Fry egg rolls 2-3 minutes per side until golden brown and crispy.
  8. Drain on paper towel-lined plate.
  9. Optionally serve with Thousand Island dressing and garnish with fresh parsley.
