Description
These easy-to-make melts feature flaky refrigerated biscuits generously filled with a creamy, cheesy blend of succulent shrimp and tender crab meat, baked until golden and bubbly.
Ingredients
1 can refrigerated flaky biscuit dough
½ cup cooked shrimp, chopped
½ cup cooked lump crab meat
1 cup shredded mozzarella or Monterey Jack cheese
2 tbsp mayonnaise or cream cheese (optional, for creamier filling)
1 tsp garlic powder
Salt, to taste
Black pepper, to taste
1 tbsp fresh parsley, chopped
1 tbsp butter, melted
Instructions
Step 1: Preheat your oven according to biscuit package directions, usually around 375°F (190°C). Prepare a baking sheet with parchment paper.
Step 2: In a medium bowl, combine the chopped cooked shrimp, lump crab meat, shredded cheese, mayonnaise or cream cheese (if using), garlic powder, salt, and black pepper. Mix gently until well combined.
Step 3: Open the can of biscuit dough. Separate each biscuit and flatten it slightly with your hands or a rolling pin to create a wider base, about 3-4 inches in diameter.
Step 4: Place a generous spoonful of the shrimp and crab mixture onto the center of half of the flattened biscuits. Top each filled biscuit with another flattened biscuit, gently pressing the edges together to seal. You can crimp the edges with a fork if desired to ensure the filling stays inside.
Step 5: Arrange the sealed biscuit melts on the prepared baking sheet. Brush the tops of each melt with melted butter.
Step 6: Bake for 18-20 minutes, or until the biscuits are golden brown and cooked through and the filling is hot and bubbly. Keep an eye on them to prevent overbrowning.
Step 7: Once out of the oven, sprinkle with fresh chopped parsley before serving warm. Enjoy!
Notes
For extra flavor, add a pinch of old bay seasoning to the seafood mixture. These melts are best served fresh but can be reheated gently in the oven. If you don't have lump crab meat, imitation crab can be used in a pinch, though the flavor will be different.
