Description
A rich, spicy, and deeply aromatic garlic butter sauce designed to coat shrimp, crab, and potatoes for an authentic seafood boil experience.
Ingredients
2 cups (4 sticks) Unsalted Butter
2 medium Yellow Onions, finely diced
1/2 cup Garlic, minced (about 2 heads)
4 tablespoons Old Bay Seasoning
2 tablespoons Cajun Seasoning
1 tablespoon Smoked Paprika
1 tablespoon Lemon Pepper
1 tablespoon Brown Sugar
1 tablespoon Cayenne Pepper (adjust for heat)
2 tablespoons Fresh Lemon Juice
1/2 cup Seafood cooking liquid (or chicken broth)
Hot sauce to taste
Instructions
Step 1: Melt the unsalted butter in a large skillet or saucepan over medium-low heat until fully liquid.
Step 2: Add the finely diced onions to the butter. Sauté for 5-7 minutes until the onions are soft and translucent.
Step 3: Stir in the minced garlic and cook for 1-2 minutes until fragrant, being careful not to let it brown.
Step 4: Add the Old Bay, Cajun seasoning, smoked paprika, lemon pepper, brown sugar, and cayenne. Whisk continuously for 2 minutes to bloom the spices.
Step 5: Pour in the lemon juice and the seafood cooking liquid (or broth). Whisk to emulsify the sauce.
Step 6: Reduce heat to low and simmer for 5 minutes. Stir in hot sauce if desired and serve warm.
Notes
For the best results, use fresh lemon juice rather than bottled. If the sauce separates, whisk in a tablespoon of warm water to bring it back together.
