Description
Fun, chewy, and festive green shamrock-shaped candies made with lime Jello and extra gelatin for the perfect texture.
Ingredients
1 package (3 oz) Lime Jello flavored gelatin
2 packets (0.25 oz each) unflavored gelatin
1/2 cup cold water
1/4 tsp citric acid (optional for tartness)
Instructions
Step 1: Pour the 1/2 cup of cold water into a small bowl and sprinkle both packets of unflavored gelatin over the surface. Let it sit for 5 minutes to bloom.
Step 2: In a small saucepan, combine the bloomed gelatin with the Lime Jello powder and citric acid if using.
Step 3: Place the pan over low heat and stir constantly for 3-5 minutes until the sugar and gelatin are completely dissolved. Do not boil.
Step 4: Remove the pan from the heat. If there is a layer of white foam on top, use a spoon to gently skim it off for clearer gummies.
Step 5: Use a dropper to fill your silicone shamrock molds to the top of each cavity.
Step 6: Place the molds in the refrigerator for at least 45 minutes to set completely.
Step 7: Pop the gummies out of the mold and serve immediately or store in an airtight container.
Notes
To avoid air bubbles, try not to whisk too vigorously; a gentle stirring motion is best.
