A creamy, no-bake layered mint dessert inspired by the iconic St. Patrick's Day milkshake.
Ingredients
36 Chocolate sandwich cookies (Oreos)
6 tbsp unsalted butter, melted
8 oz cream cheese, softened
1 cup powdered sugar
16 oz whipped topping (like Cool Whip), divided
2 packages (3.4 oz each) instant vanilla pudding mix
3 cups whole milk, cold
1 tsp peppermint extract, divided
Green food coloring
Chocolate shavings for garnish
Instructions
Step 1: Crush the chocolate sandwich cookies into fine crumbs using a food processor. Mix with melted butter and press firmly into the bottom of a 9x13 inch dish.
Step 2: In a medium bowl, beat softened cream cheese and powdered sugar until smooth. Stir in 1/2 tsp peppermint extract and green food coloring. Fold in 1 cup of whipped topping. Spread over the crust.
Step 3: In another bowl, whisk together vanilla pudding mix and cold milk for 2 minutes. Stir in the remaining 1/2 tsp peppermint extract and green food coloring until the desired shade is reached.
Step 4: Spread the pudding mixture over the cream cheese layer.
Step 5: Top with the remaining whipped topping and garnish with chocolate shavings.
Step 6: Refrigerate for at least 6 hours before serving.
