Description

This comforting dish combines juicy mini meatloaves with perfectly roasted potatoes, all cooked together on one convenient sheet pan. The mini meatloaves are packed with flavor and are a fun twist on a classic hearty dinner.


Ingredients

  • 1 pound ground beef (or turkey)
  • 1/2 cup breadcrumbs
  • 1/4 cup grated Parmesan cheese
  • 1/4 cup milk
  • 1 large egg
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • 1/4 cup ketchup (for glaze)
  • 1.5 pounds baby potatoes (halved)
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon dried rosemary (or your favorite herbs)
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a large bowl, toss the halved baby potatoes with olive oil, garlic powder, rosemary, salt, and pepper until well coated. Arrange the seasoned potatoes in a single layer on one side of a large sheet pan.
  3. In a mixing bowl, combine the ground beef, breadcrumbs, Parmesan cheese, milk, egg, garlic powder, onion powder, Italian seasoning, salt, and pepper. Mix until just combined—avoid overmixing to keep the meatloaf tender.
  4. Divide the mixture into 6-8 equal portions and shape them into mini loaves. Place them on the other side of the sheet pan, leaving space between each loaf.
  5. Brush the tops of the mini meatloaves with ketchup for added flavor and a nice glaze.
  6. Place the sheet pan in the preheated oven and bake for 25-30 minutes, or until the meatloaves are cooked through and the internal temperature reaches 160°F (70°C) and the potatoes are fork-tender.
  7. Remove the sheet pan from the oven and let it cool for a few minutes. Serve the mini meatloaves alongside the roasted potatoes for a hearty and satisfying meal.
