A fast and flavorful one-pan Italian-inspired dinner featuring juicy sausages, caramelized peppers, and a gooey cheese topping.
Ingredients
1 lb Italian sausages (sweet or hot)
3 large bell peppers (red, yellow, and green), sliced
1 large red onion, sliced
2 tbsp olive oil
1 tsp dried oregano
1/2 tsp garlic powder
1/2 tsp salt
1/4 tsp black pepper
1.5 cups shredded mozzarella cheese
Instructions
Step 1: Preheat your oven to 400°F (200°C) and line a large rimmed baking sheet with parchment paper.
Step 2: In a large bowl, toss the sliced peppers and onions with olive oil, oregano, garlic powder, salt, and pepper until well coated.
Step 3: Spread the vegetables in an even layer on the baking sheet and place the sausages on top.
Step 4: Roast for 25-30 minutes, flipping the sausages halfway through, until the meat is cooked and vegetables are tender.
Step 5: Sprinkle the shredded mozzarella over the sausages and peppers and return to the oven for 2 minutes until the cheese is melted and bubbly.
Notes
For a spicier kick, add a pinch of red pepper flakes before roasting. Serve on toasted rolls for a classic sub sandwich style meal.
