A foolproof method for creating juicy, tender shredded chicken that works perfectly in hundreds of shredded chicken recipes.
Ingredients
1.5 lbs Boneless Skinless Chicken Breasts or Thighs
2 cups Chicken Broth (low sodium)
1 tsp Sea Salt
1/2 tsp Black Pepper
1 tsp Garlic Powder
1 tsp Onion Powder
1 Bay Leaf
1 tbsp Olive Oil
Instructions
Step 1: Pat the chicken dry with paper towels and season both sides with salt, pepper, garlic powder, and onion powder.
Step 2: Heat olive oil in a large skillet or pot over medium-high heat. Sear the chicken for 2-3 minutes per side until golden brown.
Step 3: Pour in the chicken broth and add the bay leaf. Bring to a light simmer, then reduce heat to low.
Step 4: Cover the pot and simmer for 15-20 minutes, or until the internal temperature reaches 165°F (74°C).
Step 5: Remove chicken from the liquid and let it rest for 5 minutes on a cutting board.
Step 6: Use two forks or a stand mixer to shred the chicken into bite-sized pieces.
Step 7: Toss the shredded meat with a few tablespoons of the remaining cooking liquid to keep it moist.
Notes
For extra flavor, add a halved onion and two smashed garlic cloves to the poaching liquid. Store in an airtight container for up to 4 days.
