Description
A rich, creamy, and spicy low-carb cheese dip packed with seasoned ground beef and zesty Rotel tomatoes.
Ingredients
1 lb ground beef (80/20)
1 tsp salt
1/2 tsp black pepper
1 tsp garlic powder
1/2 tsp cumin
2 cans (10 oz each) Rotel Diced Tomatoes and Green Chilies, drained
8 oz full-fat cream cheese, cubed
2 cups sharp cheddar cheese, freshly shredded
Optional: Fresh cilantro and green onions for garnish
Instructions
Step 1: Brown the ground beef in a large skillet over medium-high heat, seasoning with salt, pepper, garlic powder, and cumin.
Step 2: Drain the excess fat from the skillet once the beef is fully cooked.
Step 3: Stir in the drained Rotel tomatoes and reduce heat to medium.
Step 4: Add the cubed cream cheese and stir until melted and well incorporated with the meat.
Step 5: Fold in the shredded cheddar cheese and stir until smooth and bubbly.
Step 6: Garnish with cilantro or green onions and serve warm with keto-friendly dippers.
Notes
Always drain the Rotel thoroughly to avoid a thin consistency. Freshly grated cheese melts much smoother than pre-bagged versions.
