Ingredients
4 boneless, skinless chicken breasts (about 1.5 lbs total)
2 tablespoons olive oil
1 teaspoon garlic powder
1 teaspoon onion powder
1 teaspoon dried oregano
1/2 teaspoon dried thyme
1/2 teaspoon paprika
1/4 teaspoon black pepper
1/2 teaspoon salt (or to taste)
Fresh parsley, chopped (for garnish, optional)
Instructions
Step 1: Preheat your oven to 400°F (200°C). Lightly grease a baking dish or line a baking sheet with parchment paper.
Step 2: Pat the chicken breasts dry with paper towels. If chicken breasts are very thick, you can gently pound them to an even 1-inch thickness for uniform cooking.
Step 3: In a small bowl, combine garlic powder, onion powder, oregano, thyme, paprika, black pepper, and salt.
Step 4: Drizzle olive oil over both sides of the chicken breasts. Sprinkle the spice mixture evenly over both sides of the chicken, gently pressing to adhere.
Step 5: Place the seasoned chicken breasts in the prepared baking dish or on the baking sheet.
Step 6: Bake for 20-25 minutes, or until the internal temperature reaches 165°F (74°C) at the thickest part. Cooking time may vary based on thickness.
Step 7: Remove from oven and let the chicken rest for 5-10 minutes before slicing or serving. Garnish with fresh chopped parsley, if desired.
Notes
For an extra burst of flavor, marinate the chicken in the olive oil and spice mixture for at least 30 minutes (or up to 4 hours in the refrigerator) before baking. This recipe also works great for grilling or pan-frying.
