Ingredients
1 lb large sea scallops, patted very dry
1 tbsp olive oil (for searing)

For the Zesty Lime Cilantro Sauce:
1/4 cup fresh lime juice (from 2-3 limes)
1/4 cup chopped fresh cilantro
1 clove garlic, minced
1 tbsp olive oil
1/4 tsp red pepper flakes (optional)

Instructions
Step 1: Prepare the scallops. Pat the scallops thoroughly dry with paper towels. Season both sides generously with salt and black pepper.
Step 2: Heat the pan. Heat 1 tablespoon of olive oil in a large non-stick or cast-iron skillet over medium-high heat until it shimmers and just begins to smoke.
Step 3: Sear the scallops. Place the scallops in the hot pan in a single layer, ensuring not to overcrowd. Cook for 1.5 to 2 minutes per side until a deep golden-brown crust forms and the scallops are opaque throughout. Cook in batches if necessary.
