Description

A fun and spooky appetizer featuring mozzarella balls, pepperoni, olives, and bell pepper, perfect for Halloween parties.


Ingredients

1 cup small mozzarella balls (pearl or ciliegine), drained
4 ounces large, round pepperoni slices
1 red bell pepper, very thinly sliced into small, irregular strips
1/4 cup pitted black olives (Kalamata or black ripe olives), thinly sliced into rounds
12-15 small wooden skewers or toothpicks


Instructions

Step 1: Ensure mozzarella balls are well-drained and patted dry with a paper towel.
Step 2: Place one large pepperoni slice flat on a clean surface.
Step 3: Center one mozzarella ball on top of each pepperoni slice.
Step 4: Gently press one thin round slice of black olive onto the center of each mozzarella ball to create the pupil.
Step 5: Arrange a few of the very thinly sliced red bell pepper strips around the mozzarella ball, extending onto the pepperoni, to create the 'bloodshot' veins.
Step 6: Carefully insert a wooden skewer or toothpick through the center of the olive, mozzarella, and pepperoni, securing all layers.
Step 7: Arrange the finished Skewered Pepperoni Eyeballs on a serving platter and chill until ready to serve. For best results, serve within a few hours of assembly.

Notes

For an extra chilling effect, serve these eyeballs on a bed of shredded red cabbage or lettuce to resemble gore. You can also provide small bowls of marinara or ranch dressing for dipping.
