Skillet Tortellini with Sausage and Cherry Tomatoes

Description

An incredibly easy and flavorful one-pan meal featuring tender cheese tortellini, savory Italian sausage, and burst cherry tomatoes, all cooked in a rich sauce.


Ingredients

20 oz cheese tortellini (fresh or refrigerated)
1 tbsp olive oil
1/2 tsp salt (for tortellini)
1 lb Italian sausage, casings removed
1 pint cherry tomatoes, halved
2 cloves garlic, minced
1/2 tsp red pepper flakes (optional)
1/2 tsp salt (for sausage/tomatoes)
1/4 tsp black pepper
Fresh basil for garnish (optional)
Grated Parmesan cheese for serving (optional)


Instructions

Step 1: Cook the tortellini according to package instructions until al dente. Drain well and set aside.
Step 2: In a large skillet, heat the olive oil over medium heat.
Step 3: Add the cooked tortellini and 1/2 tsp salt to the skillet, tossing gently to coat evenly. Cook for about 2-3 minutes, or until lightly golden.
Step 4: Remove the tortellini from the skillet and set aside.
Step 5: In the same skillet, cook the Italian sausage over medium heat, breaking it up with a spoon, until browned and cooked through.
Step 6: Drain any excess grease from the skillet if necessary.
Step 7: Add the halved cherry tomatoes, minced garlic, red pepper flakes, 1/2 tsp salt, and black pepper. Cook for about 3-5 minutes, or until the tomatoes are softened and start to burst.
Step 8: Return the cooked tortellini to the skillet and toss to combine with the sausage and tomatoes.
Step 9: Optional: Garnish with fresh basil and serve immediately with grated Parmesan cheese.

Notes

For extra depth of flavor, deglaze the pan with a splash of white wine after browning the sausage before adding tomatoes. A sprinkle of fresh parsley or oregano also works wonderfully as a garnish.
