- 20 oz cheese tortellini
- 1 tbsp olive oil
- ½ tsp salt
- 1 lb Italian sausage, casings removed
- 1 pint cherry tomatoes, halved
- 2 cloves garlic, minced
- ½ tsp red pepper flakes
- ½ tsp salt
- ¼ tsp black pepper
- Fresh basil for garnish (optional)
- Grated Parmesan cheese for serving (optional)
Instructions
- Cook tortellini according to package instructions until al dente; drain and set aside.
- Heat olive oil in large skillet over medium heat.
- Add cooked tortellini and ½ tsp salt; toss and cook 2-3 minutes until lightly golden; remove and set aside.
- In same skillet, cook Italian sausage over medium heat, breaking up with spoon, until browned and cooked through.
- Add halved cherry tomatoes, minced garlic, red pepper flakes, ½ tsp salt, and black pepper; cook 3-5 minutes until tomatoes soften.
- Add tortellini back to skillet; toss to combine with sausage and tomatoes.
- Optionally garnish with fresh basil and serve with grated Parmesan cheese.
