Description
A classic Midwestern comfort dish featuring tender shredded beef and rich gravy served over bread and mashed potatoes.
Ingredients
3 lbs beef chuck roast
1 medium yellow onion, sliced
4 cups beef broth
2 tablespoons Worcestershire sauce
2 tablespoons soy sauce
1 teaspoon garlic powder
1 teaspoon onion powder
1 teaspoon dried thyme
1 teaspoon black pepper
1 teaspoon salt
2 tablespoons cornstarch
1/4 cup cold water
6-8 slices white bread or Texas toast
4 cups mashed potatoes
Instructions
Step 1: Place the sliced onion in the bottom of your slow cooker to create a base.
Step 2: Season the beef roast on all sides with garlic powder, onion powder, thyme, salt, and pepper, then place it on the onions.
Step 3: Combine beef broth, Worcestershire sauce, and soy sauce in a bowl and pour over the meat.
Step 4: Cover and cook on Low for 8-10 hours or on High for 5-6 hours until the beef is very tender.
Step 5: Remove the beef and shred it with two forks. Keep warm.
Step 6: Mix cornstarch and cold water, whisk into the slow cooker liquid on High for 15 minutes to thicken into gravy.
Step 7: Assemble by placing beef on bread, topping with mashed potatoes, and pouring gravy over the top.
Notes
Sear the beef in a pan first for extra flavor. For a dairy-free version, use olive oil based mashed potatoes.
