Description
An ultra creamy and cheesy slow cooker soup featuring Italian sausage and tender tortellini.
Ingredients
1 lb ground Italian sausage
1 yellow onion, diced
3 cloves garlic, minced
1 tsp dried oregano
1 tsp dried basil
4 cups chicken broth
1 can (14.5 oz) diced tomatoes
20 oz refrigerated cheese tortellini
2 cups baby spinach
1 cup heavy cream
1/2 cup grated Parmesan cheese
Salt and pepper to taste
Instructions
Step 1: Brown the Italian sausage in a skillet over medium-high heat until cooked through; drain the grease.
Step 2: Add the cooked sausage, onion, garlic, oregano, basil, chicken broth, and tomatoes to the slow cooker.
Step 3: Cook on low for 6-7 hours or on high for 3-4 hours.
Step 4: Stir in the refrigerated tortellini and heavy cream 30-45 minutes before serving.
Step 5: Just before serving, stir in the spinach and Parmesan cheese until the spinach is wilted.
Step 6: Season with salt and pepper as needed and serve warm.
Notes
To make it lighter, replace heavy cream with whole milk and use turkey sausage.
