Description

Tender beef bites and baby potatoes simmered to perfection in a rich, savory garlic butter sauce, all made effortlessly in your slow cooker.


Ingredients

2 lbs beef stew meat, cut into 1-inch cubes
2 lbs baby potatoes, halved or quartered
8-10 cloves garlic, minced
1/2 cup unsalted butter, melted
1 cup beef broth
1 tbsp dried thyme
1 tbsp dried rosemary
1 tsp onion powder
1 tsp paprika
1 tsp salt, or to taste
1/2 tsp black pepper, or to taste
Fresh parsley, chopped, for garnish (optional)


Instructions

Step 1: Pat the beef cubes dry with paper towels. In a large bowl, toss the beef with onion powder, paprika, salt, and black pepper until evenly coated.
Step 2: Place the seasoned beef cubes and the halved or quartered baby potatoes into a 6-quart or larger slow cooker.
Step 3: In a small bowl, whisk together the melted butter, minced garlic, dried thyme, dried rosemary, and beef broth.
Step 4: Pour the garlic butter mixture evenly over the beef and potatoes in the slow cooker. Stir gently to ensure all ingredients are coated.
Step 5: Cover the slow cooker with the lid and cook on LOW for 6-8 hours, or on HIGH for 3-4 hours, until the beef is fork-tender and the potatoes are soft.
Step 6: Once cooked, stir the contents gently. Taste and adjust seasoning if necessary. Garnish with fresh chopped parsley, if desired, and serve hot.

Notes

For an even richer flavor, consider searing the beef cubes in a hot pan for a few minutes before adding them to the slow cooker. This step creates a delicious crust and locks in more savory juices. Serve with crusty bread to soak up all the delicious garlic butter sauce!
