Ingredients
2 lbs beef stew meat, cut into 1-inch pieces
1.5 lbs baby potatoes, halved or quartered if large
1/2 cup unsalted butter, melted
4-5 cloves garlic, minced
1 tablespoon Worcestershire sauce
1 teaspoon dried thyme
1 teaspoon dried rosemary
Salt and black pepper to taste
Fresh chopped parsley for garnish (optional)
Instructions
Step 1: Generously season the beef bites with salt and black pepper, then place them evenly in your slow cooker.
Step 2: Arrange the baby potatoes on top of the seasoned beef in the slow cooker. If any potatoes are particularly large, cut them in half or quarters for more even cooking.
Step 3: In a small saucepan, melt the unsalted butter over medium heat. Once melted, stir in the minced garlic, Worcestershire sauce, dried thyme, and dried rosemary. Cook for 1-2 minutes until the garlic is fragrant, being careful not to burn it.
Step 4: Pour the prepared garlic butter sauce evenly over the beef and potatoes in the slow cooker. Gently stir to ensure all ingredients are well-coated.
Step 5: Cover the slow cooker with its lid. Cook on the LOW setting for 6-8 hours, or on the HIGH setting for 3-4 hours. The beef should be incredibly tender and the potatoes soft when thoroughly cooked. Actual cooking times may vary by slow cooker model, so check for desired tenderness.
Step 6: Once cooking is complete, give the contents a final gentle stir. Garnish with fresh chopped parsley, if desired, and serve hot.
Notes
For an even richer flavor, quickly sear the beef in a hot pan before adding to the slow cooker. Avoid lifting the lid during cooking to maintain heat and cooking time. Adjust herbs to your preference.
