Ingredients
- 1.5 lbs beef stew meat, cut into bite-sized pieces
- 1.5 lbs baby potatoes, halved or quartered if large
- 1/2 cup unsalted butter
- 6 cloves garlic, minced
- 1 tablespoon Worcestershire sauce
- 1 teaspoon dried thyme
- 1 teaspoon dried rosemary
- Salt and pepper to taste
- Fresh parsley, chopped (for garnish)
Instructions
- Season the beef bites with salt and pepper. Place them in the slow cooker.
- Add the halved baby potatoes on top of the beef in the slow cooker.
- In a small saucepan over medium heat, melt the butter. Once melted, stir in the minced garlic, Worcestershire sauce, thyme, and rosemary. Cook for about 1-2 minutes until fragrant.
- Pour the garlic butter sauce over the beef and potatoes in the slow cooker. Gently stir to coat everything evenly.
- Cover the slow cooker and cook on low for 6-8 hours or on high for 3-4 hours, until the beef is tender and the potatoes are cooked through.
- Once cooked, give everything a gentle stir. Garnish with fresh parsley before serving.
