- 4 boneless, skinless chicken breasts
- 1 onion, chopped
- 2 tablespoons butter
- 2 tablespoons flour
- 1 cup pineapple juice
- 1/4 cup brown sugar
- 1/4 cup ketchup
- 2 tablespoons soy sauce
- 3 cloves garlic, minced
- 1 tablespoon Worcestershire sauce
- Salt, pepper, onion powder, and ground ginger to taste
Instructions
- In a large bowl, whisk together pineapple juice, brown sugar, ketchup, soy sauce, garlic, Worcestershire sauce, salt, pepper, onion powder, and ground ginger. Set aside.
- In a skillet, melt butter over medium-high heat. Add chopped onions and sauté until golden.
- Stir in flour and cook for one minute.
- Pour in the pineapple juice mixture and bring to a boil. Simmer 10-15 minutes until thickened.
- Place chicken breasts in the slow cooker and pour sauce over them.
- Cook on low for 8 hours.
- Remove chicken and shred with two forks.
- Return shredded chicken to sauce, stir well, and serve over rice, in sandwiches, or on salads.
Notes
To thicken sauce further, leave slow cooker lid open or simmer sauce on stove. Substitute chicken thighs for juicier meat. Store leftovers in airtight container up to 3-4 days.
