Description

A warm, gooey, and decadent southern-style pimento cheese dip made effortless in the slow cooker.


Ingredients

16 oz Sharp Cheddar Cheese, freshly grated
8 oz Monterey Jack Cheese, freshly grated
8 oz Cream Cheese, softened and cubed
1 cup high-quality mayonnaise
4 oz diced pimentos, drained
1 tsp garlic powder
1 tsp onion powder
1/2 tsp smoked paprika
1/4 tsp cayenne pepper
Fresh chives for garnish


Instructions

Step 1: Grate the cheddar and Monterey Jack cheese manually and set aside.
Step 2: In the slow cooker, mix the cream cheese cubes, mayo, and spices until smooth.
Step 3: Fold in the shredded cheeses and the drained pimentos.
Step 4: Cover and cook on LOW for 1 to 1.5 hours, stirring once halfway through.
Step 5: Once melted and bubbly, switch to the 'WARM' setting and serve directly from the crock.

Notes

Always grate your own cheese from a block for the best melting results. Pre-shredded cheese contains anti-caking agents that can make the dip grainy.
