A hearty and flavorful casserole featuring tangy Sloppy Joe meat, tender egg noodles, and melted cheddar cheese, all made effortlessly in your slow cooker.
Ingredients
1 lb ground beef (or ground turkey)
1 small onion, chopped
1 green bell pepper, chopped
1 (15 oz) can tomato sauce
¾ cup ketchup
2 tbsp brown sugar
1 tbsp yellow mustard
1 tsp garlic powder
1 tsp onion powder
½ tsp black pepper
2 cups shredded cheddar cheese
1 (16 oz) package egg noodles, cooked and drained
Instructions
Step 1: In a large skillet over medium heat, brown the ground beef with the chopped onion and green pepper. Cook until meat is no longer pink and vegetables are soft. Drain excess fat.
Step 2: In a bowl, combine tomato sauce, ketchup, brown sugar, yellow mustard, garlic powder, onion powder, and black pepper. Stir until fully blended.
Step 3: Add the cooked beef and veggie mixture to the slow cooker. Pour in the sauce and stir to combine all ingredients.
Step 4: Cover and cook on low for 3-4 hours, or on high for 1.5-2 hours. This allows the flavors to meld and thicken.
Step 5: About 30 minutes before serving, stir in the cooked egg noodles and half the shredded cheese. Spread the remaining cheese evenly on top. Cover and allow it to melt completely.
Step 6: Spoon the casserole into bowls and serve warm. Garnish with fresh parsley or chopped scallions if desired.
Notes
This casserole is fantastic for meal prep! Store leftovers in an airtight container for up to 3-4 days in the refrigerator, or freeze for up to 3 months. Serve with a simple side salad or extra crusty bread.
