Description
A succulent, double-smoked bone-in ham finished with a decadent and sticky cherry-bourbon glaze.
Ingredients
1 (8-10 lb) Bone-in spiral sliced ham
1 cup apple juice
1 cup cherry preserves
1/2 cup high-quality bourbon
1/2 cup dark brown sugar
2 tablespoons Dijon mustard
1/4 teaspoon ground cloves
1/4 teaspoon cinnamon
Instructions
Step 1: Preheat your smoker to 225°F using cherry or fruit wood pellets.
Step 2: Place the ham in an aluminum roasting pan and pour the apple juice into the bottom.
Step 3: Smoke the ham for about 2.5 hours or until the internal temperature reaches 130°F.
Step 4: While smoking, whisk the preserves, bourbon, sugar, mustard, and spices in a saucepan over medium heat for 10 minutes.
Step 5: Once the ham hits 130°F, brush it liberally with the cherry bourbon glaze.
Step 6: Increase the smoker heat to 300°F and cook for 20-30 more minutes until the glaze is set and caramelized.
Step 7: Remove from heat at 140°F internal temperature and rest for 15 minutes before serving.
Notes
Always use a meat thermometer to ensure the ham stays juicy. For a non-alcoholic version, use extra apple cider in place of bourbon.
