Description
A quick and delicious skillet meal featuring savory smoked sausage, tender-crisp broccoli, and al dente pasta tossed in a light garlic parmesan sauce.
Ingredients
12 oz smoked sausage (kielbasa or andouille), sliced into rounds
8 oz penne or rotini pasta
3 cups fresh broccoli florets
3 cloves garlic, minced
2 tablespoons olive oil
1/2 cup grated Parmesan cheese
1/4 teaspoon red pepper flakes
1/2 cup reserved pasta water
1 tablespoon lemon juice
Salt and black pepper to taste
Instructions
Step 1: Bring a large pot of salted water to a boil and cook the pasta according to package directions.
Step 2: During the last 3 minutes of the pasta cooking time, add the broccoli florets to the boiling water to blanch them.
Step 3: Reserve 1/2 cup of the pasta cooking water, then drain the pasta and broccoli.
Step 4: In a large skillet, heat the olive oil over medium-high heat. Add the sliced smoked sausage and sear until browned on both sides, about 5-7 minutes.
Step 5: Stir in the minced garlic and red pepper flakes, cooking for 1 minute until fragrant.
Step 6: Add the drained pasta, broccoli, and reserved pasta water to the skillet. Toss to combine.
Step 7: Remove from heat and stir in the Parmesan cheese and lemon juice. Season with salt and pepper to taste before serving.
Notes
For a healthier version, use whole wheat pasta and turkey smoked sausage. To add extra heat, increase the red pepper flakes.
