Ingredients
2 lbs boneless skinless chicken breasts
3 tbsp ranch seasoning powder
1 tbsp smoked paprika
1 tbsp garlic powder
1 tsp onion powder
2 tbsp avocado oil
2 tbsp unsalted butter
4 cloves garlic, minced
Fresh parsley for garnish
Instructions
Step 1: Slice chicken breasts in half horizontally to create thinner cutlets.
Step 2: In a small bowl, whisk together the ranch seasoning, smoked paprika, garlic powder, and onion powder.
Step 3: Rub the spice mixture onto all sides of the chicken, pressing firmly to adhere.
Step 4: Preheat a large cast iron skillet over medium-high heat and add the avocado oil.
Step 5: Place chicken in the skillet and use a heavy weight or pan to smash the chicken down flat.
Step 6: Sear for 4 minutes, then flip. Add butter and minced garlic to the pan and sear for another 4 minutes while basting.
Step 7: Rest the chicken for 5 minutes before slicing and garnishing with parsley.
Notes
Ensure the chicken is at room temperature before cooking to ensure an even sear throughout.
