Ingredients
2 large sweet potatoes, peeled and cubed
1 can (15 oz) chickpeas, rinsed and dried
3 tbsp extra virgin olive oil
1 tbsp smoked paprika
1 tsp ground cumin
1 tsp garlic powder
1/2 tsp sea salt
1/4 tsp black pepper
2 cups fresh kale, chopped
Instructions
Step 1: Preheat your oven to 425°F (220°C) and line a large baking sheet with parchment paper.
Step 2: In a large bowl, toss the cubed sweet potatoes and chickpeas with olive oil, smoked paprika, cumin, garlic powder, salt, and pepper.
Step 3: Spread the mixture in a single layer on the baking sheet.
Step 4: Roast for 25-30 minutes, tossing halfway through, until potatoes are tender and chickpeas are crisp.
Step 5: Stir in the chopped kale during the last 5 minutes of cooking until wilted.
Step 6: Serve warm with your favorite dressing or fresh herbs.
Notes
For extra flavor, drizzle with a lemon-tahini dressing before serving.
