Description

A moist and tender banana bread featuring a signature crackly cinnamon-sugar crust inspired by the classic snickerdoodle cookie.

Ingredients

Scale

3 large ripe bananas, mashed
1/2 cup unsalted butter, melted
1/2 cup granulated sugar
1/2 cup light brown sugar
1 large egg
1 teaspoon vanilla extract
1 1/2 cups all-purpose flour
1 teaspoon baking powder
1 teaspoon baking soda
1/2 teaspoon salt
1 tablespoon ground cinnamon
2 tablespoons whole milk
2 tablespoons granulated sugar (for topping)
1 teaspoon ground cinnamon (for topping)

Instructions

Step 1: Preheat oven to 350°F and grease a 9x5 loaf pan.
Step 2: Whisk melted butter and both sugars in a large bowl.
Step 3: Add the egg and vanilla, whisking until smooth, then stir in mashed bananas and milk.
Step 4: Sift the flour, baking powder, baking soda, salt, and cinnamon into the wet mixture.
Step 5: Fold gently until just combined, being careful not to overmix.
Step 6: Transfer batter to the pan and sprinkle with the cinnamon-sugar topping mixture.
Step 7: Bake for 55-65 minutes until a toothpick comes out clean, then cool before slicing.

Notes

Use the darkest bananas you can find for the best natural sweetness and moisture levels.
