Ingredients

Instructions

  1. Mix Dry Ingredients: In a bowl, whisk together the flour, baking powder, baking soda, and salt. Set aside.
  2. Cream Butter and Sugar: In a large mixing bowl, cream together the softened butter and granulated sugar until light and fluffy.
  3. Add Egg and Extracts: Beat in the egg, vanilla extract, and almond extract (if using) until well combined.
  4. Gradually Add Dry Ingredients: Slowly add the flour mixture to the butter mixture, mixing until just combined. Do not overmix; the dough should be soft and slightly sticky.
  5. Chill: Divide the dough into two discs, wrap in plastic wrap, and refrigerate for at least 1 hour or until firm.
  6. Preheat Oven: Preheat your oven to 350°F (175°C) and line baking sheets with parchment paper.
  7. Roll Out the Dough: On a lightly floured surface, roll out one disc of dough to about 1/4-inch thickness. Use cookie cutters to cut out shapes and place them on the prepared baking sheets.
